Yes that’s right – Peach, Tomato and Caper salsa. This is a really great tasting salsa with a great combination of flavors. Peaches are every where and they are one of my favorite fruits so I’m always looking for new ways to serve them and to combine different flavors with it. I served this with salmon – you know much I like salmon. You could also serve it with any fish, maybe sea bass or cod – poached, grilled or fried.
2 Peaches, cut into segments and then in half
1/2 Red Onion, diced
1 Plum tomato, cut into segments and then in half (there’s a pattern here folks)
15 – 20 Capers with the stem
1/4 cup Coriander – rough chopped
2 tbsps. of Seasoned Rice Vinegar
1 tsp. Fish Sauce (start with a 1/2 tsp. taste and add more as needed)
Combine the peaches, red onion, tomato, capers and coriander and toss. Combine the liquids (please taste the mixture before you add it to the salsa), add to the salsa and toss. Let the salsa marinate for a couple of hours in the fridge. Let me tell you, it tastes as good as it looks! As always – enjoy!
