I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

Pistachio Pudding Cake – From Scratch

Oh this is a must try recipe – unless there are nut allergies in your household. My wife and daughter had this cake – or something like it, at a tea shop a while ago. They raved about it to me which I always take to meaning I should make it. I scoured the internet [...]

Chicken Leg Curry

I know it’s as natural as the seasons changing or night following day but it is never easy to let someone go when you love them - even if it is their time. My father passed away a few weeks back, he was 98 and I miss him very much. I often joked in my [...]

All-in Cookie

I know, it's been a while, lots going on that kept me busy.  But I will make it up to you with this recipe.  I call this the All-in Cookie.  It is packed with a variety of flavors from dried fruit such as cranberries, currants, raisins and sour cherries all reconstituted in a bit of [...]

Espresso Milo Cookies

This is a tasty grown up cookie.  It has all the elements of a child’s cookie – but it has the unmistakable quality of an adult cookie.  The espresso in this coffee is wonderfully pronounced.  This is originally from a Dorie Greenspan cookie which – as you know, is one of my favorite Pastry Chef’s.  [...]

Spicy Szechuan Style Chicken

I know I've given you a lot of baking recipes - still seems like Christmas Treats rule this house.  I'm changing it up a bit with this recipe which is one of my favorite dishes to make. It has some heat to it – lots of heat actually, but you can tone it down if [...]

Blood Orange Sweet Potato Cake

Sweet potato! In a cake?! Well why not! Not much though, just ½ a cup, but it lends such richness and an earthy sweetness to this cake. But the real star is the boost it gets from the addition of the seasonally available blood orange. Only a little time left to get them, the season [...]

Scotch Eggs

One of my favorite treats when I was growing up was Scotch Eggs. It was one of mum’s specialty dishes and although I loved them, I never made them – until today! As a kid growing up, it was like having breakfast for dinner. Mum would use ground pork and an array of spices to [...]

Scotch, Bacon and Pecan Brownies

Oh these are grown up brownies and they are good! I would typically say “I know, I had you at bacon!”, but I’ve added scotch and pecans to the title - so really take your pick at where I had you! In any event, now that I have you here, you need to try these. [...]

2018 Christmas Treat #12 – Gingerbread Cake with Lemon Curd Icing

So we started off the 2018 Christmas Treats with Mum’s Fruitcake, so let’s finish it off with another cake. I will serve this cake as the main dessert (along with all the cookies we made). The recipe reads very well and is from one of my favorite sites – epicurious, so I know it will [...]

2018 Christmas Treat #11 – White Chocolate, Salted Caramel and Coconut Cookies

If you look back on my cookie recipes, the one fairly common ingredient I have never used in my cookies is white chocolate. Something about the taste of it that bothers me. But, one look through this recipe – slightly adapted from the “oh my veggies” website, and I knew I had 2018 Christmas Treat [...]
