I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

Tiramisu Cake

I made this for my dad’s 97th birthday. We celebrated it at his place on the weekend as it was too cold to bring him out to ours. I took the cake with us - he loved this cake!!  I actually think what he really loved was the booze in the cake – hey, when [...]

Masala Lamb Roast

Many many years ago, before we knew what nut allergies were, my mum used to make this lamb roast. She would use a bone-in leg of lamb – for best flavor, smothered in this wonderful paste that would form a crust on the roasted leg. Her choice was to grind up cashews and mix it [...]

2017 Christmas Treat #12 – Louisa’s Cake

I love recipes passed down from generation to generation. I appreciate them even more when they are shared with someone who loves to cook (like me) even if they are not part of the family. I always ask for them whenever I eat something I enjoy and always seek them out in books and on [...]

2017 Christmas Treat #11 – Cinnamon Sugar Puff Pastry Chips

When I make Portuguese Egg Tarts, I sprinkle the puff pastry with cinnamon sugar, roll up the puff pastry, cut about 2 cm lengths and roll out to fit a muffin tin (recipe is on the site). The fist time I made them, I accidentally rolled a few pieces using too much pressure and they [...]

2017 Christmas Treat #10 – Bakewell Tart

I often get asked if I watch the reality cooking shows on TV and really I don’t. I just find they focus more on the drama than the recipes. I miss the old cooking shows where you actually worked through recipes. There is one however that I tend to be most loyal to and that [...]

2017 Christmas Treat #9 – Sweet Benne Wafers

Best day Ever – the last part! You know the kids picked this and the previous two cookies. My daughter Lauren always challenges me with requests. She’ll visit a country, take a picture of a dessert she has had and then send it to me with the caption “Dad please make this when I come [...]

2017 Christmas Treat #8 – No Bake Peppermint Brownies

Best day ever - Part 2!!! I told you of my baking day with my kids, they each picked a treat they wanted to help me with.  This is an interesting choice and one I probably would have overlooked, however, I was totally surprised with the outcome and will definitely make it again - a [...]

2017 Christmas Treat #7 – Raspberry and Vanilla Sugar Cookies

Best day ever!! I got to spend the day baking cookies with my daughter, my son and his girlfriend. This cookie was my son’s idea. He likes simple cookies – he isn’t into the embellished cookies like my wife and daughter. He prefers savory, but don’t worry this is not a savory cookie. Matter of [...]

2017 Christmas Treat # 6 – Pumpkin Seed, Peanut Butter and Almond Chocolate Squares

My friend Terry from Brooklin (Ontario) gave me the idea for this recipe. Lots of versions of this around the table, this is mine adapted from Terry’s. It has almond slices, pumpkin seeds, peanut butter, salted caramel pieces, Skor bits and chocolate chips. Healthy eating – well it has nuts and seeds in it – [...]

2017 Christmas Treat #5 – Kourambiethes

I think every country has a version of this cookie. The ingredients tend to be the same with some variations but the results are always delicious. Kourambiethes is a Greek cookie made primarily with lots of butter, not too much icing sugar and a couple of egg yolks. How could that possibly result in a [...]
