I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

2016 Christmas Cookie #3 – Cinnamon, Pepper and Sea Salt Cookies

Wow... where is the time going? It's already the 10th and only Christmas Cookie #3. But don't panic, we had some unusual surprises recently and the sun still rises and sets daily (where I am) and time goes on. That said, I present Cinnamon, Pepper and Sea Salt cookies. Modified from a blog called “A [...]

2016 Christmas Cookie #2 – Roasted Garlic and Cayenne Cookies

Okay, I did say that the cookies will be interesting didn’t I?! You must make this cookie as an addition to your sweet table. It sounds odd, but when you start making it, you will realize it is absolutely delightful. The aromas from the roasted garlic as it is mixing with the sugar and butter just [...]

Chocolate, Pumpkin and Walnut Biscotti

As I inadvertently get sucked into what is happening with the elections south of the border, there tends to be this emotional upheaval that I go through. Worrying about what the future holds - wars, economic unrest etc.  When I get this feeling, I think of my family - my kids mostly, nieces and nephews and how proud [...]

Savory Pumpkin Seed and Black Pepper Scones

We had some good friends drop by for tea the other day. I know they don’t like sweet things so I wanted a recipe for something savory to serve mid-afternoon. I say tea, but really this would have been great with coffee or wine! So this is another recipe that speaks to pumpkins and all [...]

Macanese style Meatloaf

Sometimes you come across a recipe which makes perfect sense and makes you think “why didn’t I do that?” This is one of those recipes. Imagine meatloaf – not the kind from a cafeteria, but the kind you make at home. Real comfort food, really delicious, moist, and flavorful – you get the idea. Now [...]

Semolina Cake with Oranges

I look at a lot of recipes – at least 100 a week I’d say. I don’t read them all the way through but I glance at the ingredients and then the steps. If it has too many steps – unless I’m in one of those "I have all the time in the world" moods – [...]

Pumpkin Spice Latte (PSL) Brûléed Cheesecake Bars

Yes it’s back! The PSL craze! I had to jump on and ride it another few times anyway. This is what you make whenever you have extra pumpkin puree (and if you don't, just go out and buy a can!). Not pumpkin pie filling, but puree. There are so many applications for pumpkin puree, but [...]

Julia Child’s Provencal Potato Gratin

As you probably know, one of the Chef's who inspired my love for cooking was Julia Child. Her approach to cooking is what I think I liked best. A Cordon Bleu certified Chef who brought French Cooking to the North American home cook. Whenever I get a chance, I try one of her recipes and [...]

Apple, Concord Grape and Yogurt Cake with Cinnamon-Sugar and Coconut Caramel Sauce

Oh this is good! Such a friendly recipe, so delicious! What got me were the words apple and cinnamon. They whisked back to my days as a young boy watching my mum bake wonderful treats – jam tarts, pies and the like. This is a recipe that truly is what baking is all about. Readily [...]
