I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

Apricot Upside-Down Cake

Once again, there I was walking through the aisles of my local grocery store, minding my own business, gazing at aisle after aisle of amazingly fresh produce when – babam! Like the commercial on TV, it hit me. Apricots, giving me that coquettish look, that French come hither look (well of course we’re talking about [...]

Japanese Spiced Salmon with Stir Fried Vegetables

Here’s a great dish to make for dinner – a few simple fresh ingredients is all it takes. You know, I walk through a grocery store more times than the average person. It's not that I shop that often but my classes are in their cooking schools so quite often, I am in more than [...]

All Purpose Biscuits

From the NY Times Cooking collection, I bring you Sam Sifton's All Purpose Biscuits.  I had to try this recipe. I consider myself a pretty good biscuit maker but this recipe called for European style butter - I use this butter. Actually I use a lot of this butter - Churn 84, For baking of [...]

Stuffed Peppers

I like dishes like this. Not crazy about using the word “easy” every time - especially for someone who loves being in the kitchen, because I think cooking in general should be “easy”. So let's call this a fun dish to make. We had rice for dinner the previous night and I had about a [...]

Apple Croustade

"Hi, my name is Chris, and I've been avoiding making anything with phyllo dough as I really don't like working with it!" Hello Chris! No kidding, I really have been avoiding anything to do with this pastry/dough. I don't know, something about all that butter in between sheets of feather light dough that seems to [...]

Sour Cream Rhubarb Cake

Thanks Betty and Bill for the rhubarb! Yes, I once again became the proud owner of some home grown rhubarb. Last time I got some, I made rhubarb compote which was a big hit with the family. Yes I was a novice rhubarber then (I know, can you believe I survived all this time without [...]

Buttermilk, Orange and Chocolate Chip Almond Brittle Cookies

This is a cakey cookie recipe. It is dense, chewy and delicious. Don't worry about leaving it in the oven for an extra minute or two beyond the baking time suggested.  Something magical happens as the cookie will develop a crisp exterior that when you bite through it, reveals a chewy moist center.  This recipe came about [...]

Pride Week!

Yes it's that time of year again, so I'm presenting you with this colorful treat. A twist on the traditional rice krispy squares. The recipe comes from a site called "cravingsofalunatic.com". I'm doing a class at the PC Cooking School at Maple Leaf Gardens this coming week - that's in the heart of Pride festivities and wanted [...]

Happy Father’s Day to all the Dads!

When I was a little boy, I could always hear my dad sing the chorus to one of his favorite songs. It was the Doris Day classic, Que Sera, Sera. It was only later in life that I realized, the meaning of the song was really his motto in life "What will be, will be". So this [...]

Mushroom, Goat Cheese and Genoa Salami Bites

I Chef'd a private party recently for some folks who really know their mushrooms. So much so, that they even supplied me with some. A whole bunch of mushrooms - fresh cremini, shiitake and oyster mushrooms as well as dried morels and porcinis - very generous of them, to feature in the evenings menu. Now I [...]
