I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

Cauliflower Steak

I will admit, I'm not the best when it comes to eating vegetables. Oh yes I know, their good for you and all. I make my dad eat them and my family but personally, give me meat and I'm happy. So when I come across a recipe that satisfies my inner-meatie(?), I want to share it [...]

Citrus Rosemary Cookies

A few years ago, when we were in the Provence area, we took advantage of every waking moment to appreciate the history/art/architecture, sample the local food, tour vineyards and farmer's markets as well as admire the beautiful countryside between destinations.  One of the herbs that takes me back to that time is Rosemary.  It's rich [...]

Settled Eggs

One of my favorite breakfast items (or dinner items during the week) to make when the kids are home on a Saturday or Sunday is this "Settled Eggs" dish. I call it Settled Eggs as the eggs are broken into place and "settle" and cook nicely around the mixture of rustically cut bacon, sausage, tomato, [...]

Bacon-Sesame Brittle

Oh my goodness! First of all, this recipe has bacon in it, secondly it has bacon in it! So you just know, it has to be good. Try this as a topping for a salad, baked sweet or regular potatoes, a steak, ice cream - vanilla or maple fudge, a very fattening snack, a cocktail reception - [...]

Rustic Apple, Nectarine and Grape Tart

This is one of those recipes you must keep in your arsenal of "emergency go-to" dishes.  Oh please don't tell me you don't have an emergency list of go-to dishes.  You know the ones when someone is dropping by on short notice or you are just too tired to make a fancy dessert.  This tart [...]

Potato Pizza – must try!

I've been making this pizza for a number of years and have seen many variations on the theme. In Italy, where simple and fresh is the premise of any dish, in France, with a béchamel sauce as a base and here with many different additions in many different pizza locations. This is one of my [...]

Spring Frittata

As a budding young Chef, this was one of my favorite dishes to make for my family for breakfast on the weekends. I think I saw it made for the first time on The Galloping Gourmet - Graham Kerr, remember him (that's how small a bud I was when I first made this). I liked [...]

Napoleons – Corned Beef and Cabbage, all grown up!

Okay I couldn't resist one more Irish dish. This is a classic taste with the combination of sweet cabbage and salty corned beef. Layer them like you would a Napoleon pastry and voila, you've just brought country food to the city! The addition of some heat takes it up a few levels but layering like [...]

Spicy Irish Skillet Cornbread

Okay, I really don't know what makes this Irish, but thought it would be a good addition to your list of go to dishes and give the plethora of "Irish" recipes out there, it fits. The Spicy (really, you thought Irish food was safe from the chili - sorry Joe!) Skillet Irish Cornbread. This didn't [...]

Keeping the faith – Guinness and St. Patrick’s Day!

I've got a couple of different recipes for this year's St. Patrick's Day.  Yes I know, everyone is posting a variation or two.  This is my favorite go-to comfort-food, Shepherd's Pie. It uses Guinness in the body of the recipe - although there's nothing stopping you from having a cold one once it's all done [...]
