I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

PC Cooking School @ Loblaw’s – November Schedule

I don't know about you, but it seems like I just started doing these Chef'ing demos at Loblaw's and I'm now considered a veteran. How fast the time has gone. Since I started with the PC Cooking Schools in June this year, I have completed almost 50 sessions as at the end of October. So [...]

BKM – Whole wheat farfalle with parsley pesto, steamed broccoli and thinly sliced prime rib

Last night we had one of my favorite comfort foods – farfalle with parsley pesto, steamed broccoli and thinly sliced prime rib.  Now I know what you’re thinking – thinly sliced prime rib.  The reality is we are trying to cut down on our meat intake so the pile of thinly sliced prime rib, psychologically [...]

BKM – Apple Pie with Cheddar Crust

We were all excited yesterday – going to go apple picking! It really is one of my favorite memories of cool fall Saturdays with the kids and their friends. I always came home with a couple of bags of apples – the crispness of apples just off the tree, the sweet tartiness of that first [...]

Lemon Tarts with Lemon Curd

I have a friend who loves lemon in all desserts.  Every time I do an engagement at his place, he has to have the taste of lemons in his dessert.  I have this dessert – I think the secret to the extra lemony taste is the lemon zest in the crust.  The crust itself is [...]

Hello Fall Hors d ‘Oeuvres!

I've been really busy over the last few weeks with mid week and weekend Chef assignments.  Some of it birthday celebrations and others just a reason for good friends to get together.  The most popular items right now are hors d 'oeuvres.  Those fast disappearing items that get walked around on platters or at stand alone stations.  [...]

BKM – Chocolate Chip Cookies

Yes… you can make these delicious cookies using the BKM – again, I cannot emphasize enough – 1 container to clean up convenience.  I made two sizes – only because I had a helper and one ice cream scoop, so I used the spoon method.  This was a Sunday night experiment and the more familiar [...]

BKM – Meatballs and Penne

My favorite comfort food is pasta with meat balls.  It doesn’t have to be spaghetti, in fact my favorite pasta is penne.  Something about the shape of the noodles, the way sauce sticks inside the tunnels, whether it is a meat sauce, tomato sauce or just pesto, it’s undeniably comfortable.  Throw in meatballs, the kind [...]

BKM – Mashed Sweet Potatoes

Oh it's the first one relax, I'll get more adventurous as my familiarity with the machine builds.  I wanted to try making something that even if I didn't follow the instructions for the machine, I'd still be able to salvage for dinner.  So Mashed Sweet Potatoes it was.  I followed the cooking instructions in the book - [...]

Update October 8th – Loblaw PC Cooking School – October Schedule

Well, fall is here! Although looking at the weather you’d never know it. But no complaints from my end, I love this weather – warm days and cool nights. In September, the PC Cooking School program took me from Georgetown to Queen’s Quay to Ajax and Newmarket and lots of places in the middle. I [...]

BKM – The beginning!

The box arrived by courier.  I carefully sliced open the tape and took each piece out, laying it all in front of me.  For the first time, looking at an instruction manual, wished my kids were here to help me!  I can do this I thought, it's what Chefs do, - I'm trained, older, seasoned as they [...]
