I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

Doodh Peda – now that’s good Fudge!

It's Wednesday and time for a treat!  This is an easy version of a classic sweet Doodh Peda--the Indian version of Canadian Fudge.  Simple ingredients you probably already have at home and if not, easy enough to get from the local grocery store.  It took less than 1 hour to make, hard to believe given the [...]

Portuguese Egg Tarts

Earlier this month, my daughter returned from her vacation in Portugal.  Absolutely loved it.  From the pictures she has seen of Goa (she hasn't been there yet), she could definitely see the Portuguese influence in the architecture, the colours and the food.  One of her emails from Portugal said "Dad, we tried these Pasteis de Nata, [...]

Stuffed Grape Leaves

At the dinner table a few weeks back, the conversation turned to vegetarian cooking and more, healthful items on the menu. Among the menu items discussed were stuffed grape leaves. I've never worked with grape leaves before but was eager to try them. I do love dolmades though I wouldn't go so far to call [...]

A 90th Birthday Party!

It was a joyous celebration – 90 years young! On the weekend I Chef’d for a wonderful family (4 sisters) celebrating their mum’s 90th birthday. As a Chef, I know that presentation is a feast for the eyes before the tongue has a chance to taste anything. Well in this particular case, the presentation was [...]

Liz’s Garden Party

What an evening! A few months ago, I was asked if I would donate a dinner for 4 to the Riverwood Conservancy Silent Auction Event to be held in April 2013. I agreed, the environment has always been a cause near and dear to my heart. I spent 3 years promoting TD Canada Trust’s Friends [...]

Salted Black and White Chocolate Brownies

Here's a recipe from one of my all time favorite Chef's Ina Garten aka the Barefoot Contessa.  I adapted the recipe to reduce the amount of fat in the Brownie.  My goodness, if they tasted this good with the reduced fat recipe, can you just imagine how good they would be with the regular recipe, [...]

Spiced Coconut Salmon on a Cedar Plank with Rosemary Garlic Potatoes

The sun was peeking through the clouds yesterday, in and out and in and out. So when it finally decided to stay out around 3, I decided to bbq. I know, I just bbq'd a few days ago, but it's summer (well almost). Anyway, here is a great recipe for a Spiced Coconut Salmon on [...]

Oh what a week!

Well my friends, it's been a hectic week at home.  Dad got sick and we had to take him to the hospital - he's much better and should be home over the next few days.  I was feeling just awful after last weekend and finally dragged myself to a walk-in on Tuesday only to discover I [...]

Apples in Puff Pastry!

At the PC Cooking Schools, I'm fortunate enough to make some healthy nutritious meals designed by the Head Chef's at main Kitchen, but I also get to introduce other recipes I have made over the years. Here's one that continues to receive great feedback. It uses Puff Pastry (I've been using the PC Brand as long as [...]
