I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

Soup of the Week – Vegetable Puree Soup

Another soup recipe in the making for you.  I used Chicken Stock this time, same recipe for making the stock as last week except substitute equal amounts of Chicken for Turkey.  Make the stock the same way as you did for the Turkey Vegetable soup. You can also make this using a vegetable stock if [...]

Avocado Fries with Lime, Coriander Yoghurt Dip

Had this in a restaurant a while back, just completely forgot about it until Gastropost put out a challenge for creative uses for Avocado's.  I also made it using Portobello Mushrooms cut into 1/4" strips as well, it would be good to try with other items like Asparagus, Squash, Kohlrabi etc - just adjust the baking times.  The best [...]

Soup of the Week – Turkey Vegetable

In the colder months of the year, I love comfort soups, in the warmer months – cold soups.  We have soup for lunch Monday to Friday.  Different types, some from recipes, other’s from ingredients I see from my trips to the grocers.  So I thought I would make this a weekly posting.  This week’s soup [...]

Habanero – Thai Chili Hot Sauce

My favourite dishes contain heat, I mean Habanero or Thai Chili style heat. It is a flavourful but potent heat which could, for some, have - ahem, lingering side effects.  But it's not just the heat I like, I want taste with heat.  Heat alone just burns your tongue and if you like this - all the [...]

Irish Soda Bread

Yes, it's that time of year again.  When things that ain't normally green - turn green.  So, being the rebel that I am, here is a recipe for a good old fashioned Irish Soda Bread (not green) which I have adapted (of course).  It's from the kind folks at All Recipes.  I've made it twice now, once [...]

Poached Fish

We were treated last evening to a wonderful get together - it was great company and equally great food at a very good friend’s house.  I was asked for an easy to do poached fish recipe.  I love poached fish.  It can be served hot or cold and with a number of different sides - [...]
