I’ve been collecting recipes for many years now. Here are a few of the ones that caught my eye. Although you may find it in one category, it could easily fit into another i.e. an appetizer could also be found in a main etc. Some have been tried, my comments usually show up in italics if I have made them. I’ve given credit to Chef’s/authors/publishers whose names I wrote down when recording the recipes, but go figure – in at the tail end of the boomer generation and blogs didn’t exist when I started collecting them and I never thought of a website either. If I’ve violated any copyrights – just let me know and I’ll fix it. If you try a recipe and have comments, please let me know, I’ll respond. As always – enjoy! Thanks – Chris (cater@foodinspires.com)

Ovaltine Chewy Sugar Cookies

This is a really fast and simple - almost one dish, cookie.  If you have never had Ovaltine growing up as a kid (or a big kid), you have missed out on a lot of really great moments.  Go out and get a jar, either the plain chocolate or malted kind.  There are multiple uses [...]

Roasted Peppers

I'm making a vegetarian lasagna for a small event today.  I thought this might be a good time to share this really easy method, but that takes the taste of the peppers up about 3 notches.  It's easy to do and the end result can be used in a number of different ways.  Start with [...]

Bolognese Sauce

I've been collecting recipes for a long time. Here's a great recipe for Bolognese Sauce for you to try.  My scribbles in my book tell me it's been adapted over the years, but still it's a simple and tasty recipe.  True to sauce making standards, just a few good ingredients that melt together to uniform the taste.  On a snowy day like [...]

Thai Curry Mussels – Dinner tonight!

I love mussels and always look for various ways to serve them.  I found this recipe by Sue Riedl in this morning's Globe and Mail.  My comments are incorporated into this recipe and I've included some instructions on working with mussels.  Lemongrass can be found in most grocery stores in it's natural form - I've also used lemongrass paste from a [...]

A traditional Goan vegetarian dish!

On the weekend I had the privilege of cooking with 5 wonderful Goan ladies who just happen to be fantastic cooks.  I've been eating their food at various family parties for over 15 years but for the first time, had a treat of being in the kitchen with them from start to finish.  In the [...]

Lamb and Couscous in 30 minutes

Another 30 minute recipe for you to try.  This is for a rack of lamb or shoulder blade chops – the marinade doesn’t change, just the cooking method, and Couscous.  If you buy your rack of lamb from grocery stores - as opposed to butcher shops, the racks will either come shrink-wrapped or in styrofoam [...]

My 30 minute version of Kung Pao Chicken and Rice

I got asked on the weekend, what do I cook when I come home from work, I'm tired but I want to eat something delicious and nutritious. I looked through my archive and found this Kung Pao recipe which I adapted over the years. It takes about 30 minutes to make but oh so delicious [...]

What’s in your pantry?!

I often get asked this question.  I didn't learn this in school although I spent a lot of time in the pantry at school and this list is by no means exhaustive (anyone who has been to my house will verify this), but to me it's the basics.  When I cook, except for fresh ingredients which [...]

Toronto’s got snow… Let’s make some Asian Chicken Vegetable soup!

There I said it!  For all the times I said we don't get snow, we got snow.  Snowmageddon - just kidding.  It's a fair amount and still falling but again, nothing like what some of the snowier parts of the country get on a typical snow day.  So... what are we doing today.  Soup of [...]
