Does anything say loving more than Chocolate Pudding!! You have lots of time to make this, you only need unsweetened cocoa, any type of nut milk (I used almond, but the original called for oat milk – either would work as well), and some dark chocolate. Garnish with anything you want, I happened to have soft Chocolate Chip Cookies which I could cut with a heart shaped mold, but even a whole cookie on top of this would be fine. Okay that’s all I’m writing, get to the store – make this for just you or someone you love! Ladies, just pass this on to the fellas; fellas just make it, you know they deserve it! 

Ingredients 
1/3 cup sugar
1/3 cup unsweetened cocoa
2 tbsp cornstarch
Sprinkle of sea salt
2 cups almond, oat milk
3 – 4 oz dark chocolate, chopped
1 tsp vanilla

Directions
In a small (preferably) non-stick pan, add the sugar, cocoa, cornstarch, sea salt, and almond milk
Over low heat whisk until it is smooth, then switch to a rubber spatula and stir constantly
Raise the heat to medium and in a couple of minutes you should see the pudding thicken up – adjust the heat removing the pan off the heat if it starts to boil, don’t let it stick to the bottom – it will burn very quickly 
When it has thickened up – about 5 minutes total, remove from the heat and stir in the vanilla
Add the chopped chocolate and stir to melt – it will melt, you do not put it back on the fire
Pour or spoon into individual martini glasses or bowls or just leave it in one serving bowl – family style is loving (also means you can have more than your share without anyone noticing – I’m just saying)

Serve this with mandarin slices – make your own or use the ones in a can; crushed nuts
Fresh berries would work great, meringue shells crushed on top
Whipped cream – come on!!!
